One, they're inexpensive and incredibly easy to make in a pinch (literally, less than one minute). Two, these birthday cake rice cakes are absolutely delicious compared to some of those ice cream sandwiches at the store. You get way more for the upfront price! And at 260 calories for two, you'll feel like you're indulging. Sometimes I really only need one, so you could knock that down to 130 calories!

This birthday cake inspired sweet treat is stupidly easy and only takes a minute to prepare because it only has three quick ingredients - your choice of rice cake, whipped topping, and sprinkles! Not only is this a healthy dessert alternative but it is gluten free and kid approved.
Then eyeball or measure out half a cup of your whipped topping. You're going to use a quarter cup for each rice cake (or more if you prefer).
*If you are adding birthday cake extract (or other flavored drops) you're going to want to scoop your whipped topping into a separate bowl and mix any extra flavorings from there.
Using a spoon, gently spread the whipped topping over your rice cake.
Lastly, decorate the whipped topping with your choice of sprinkles (1 Tsp).
Place back in the freezer for 5-10 minutes if needed, otherwise enjoy immediately!
