If you're like me, I struggle to eat in the morning. I know, I know, I'm probably the unpopular one here. Then one day, as I stared into our pantry deciding if I wanted pancakes for dinner, I thought to myself, "Why don't I make it now and save it for breakfast tomorrow?!" - as if reheated pancakes couldn't possibly be bad, right?!

Having breakfast ready to go that next morning made it much easier to hold myself accountable. Since then, meal prepping these protein pancake bowls have made my mornings and eating habits throughout the day infinitely better! And they're delicious without feeling like I'm totally giving up on the whole pancake craze - they're simply baked in a glass pan (like Anchor Hocking or Pyrex brands safe for baking).
I want to disclose that this recipe is really about the money-saving, time-efficiency and meal prepping creation aspects. And that while this recipe only pertains to the pancakes themselves (yes, this is a store-bought mix), you can dress them however you like. For some I'll add fruits, like blueberries and strawberries, others I'll use ingredients nuts and chocolate chips.
Not only does meal prep cut down on time spent making breakfast through the work week, but it also actually saves you money (especially from being tempted to run through the drive-thru). Also, I chose the option that's high in protein and fiber, which helps keep me full longer throughout the morning - making me less likely to reach for unnecessary calories.

Plus, if you have kids, this can be a perfect meal prep option so that you have breakfast before school ready to go as soon as you wake up. A single serving of this recipe could even feed two mouths, depending on your kids age and hunger level, because oftentimes I'm barely able to finish.

Preheat oven at 350F.
In a small metal mixing bowl, add in your 1/2 cup of pancake mix with roughly 1/3-1/2 cup of filtered water. You want the consistency to be slightly runnier so that it easy fills the glass container. Start at 1/3 and work up from there by Tbsp.
Mix until fully combined (some small clumps are okay).
